Herman was the son of Wilhelm Gustav Polack and Maria Elizabeth Hasz, husband of Wilhelmine Stohs, and father of William Gustav Polack.
He began his teaching career in a public school in East St. Louis, Illinois, later teaching in Lutheran schools in St. Louis, Missouri; Wausau, Wisconsin; and Cleveland, Ohio.
He was also an organist, composer and choir director, and served on the music committee for The Evangelical Lutheran Hymnbook of 1912.
