Jacob was the son of George and Mary Schmidt, and husband of Lena Burkhart (married 1901).
He attended the Elkhart Institute; Ohio Northern University, Ada, Ohio; and Temple University.
He was ordained a Mennonite preacher in 1897, serving congregations in Garden City, Missouri; West Liberty, Ohio; and Elida, Ohio.
In addition to pastoral duties, Smith was on the faculty of Hesston College, Hesston, Kansas (1910–17 & 1927–29), and was the first president of Eastern Mennonite College near Harrisonburg, Virginia (1917–22).
